Gilman City is located at 40°8′29″N 93°52′23″W / 40.14139, -93.87306 (40.141523, -93.873025).
According to the United States Census Bureau, the city has a total area of 0.9 square miles (2.2 km²), all land.
As of the census of 2000, there were 380 people, 158 households, and 100 families residing in the city. The population density was 444.9 people per square mile (172.6/km²). There were 207 housing units at an average density of 242.3/sq mi (94.0/km²). The racial makeup of the city was 99.47% White, and 0.53% from two or more races. Hispanic or Latino of any race were 0.53% of the population.
There were 158 households out of which 31.0% had children under the age of 18 living with them, 53.8% were married couples living together, 7.0% had a female householder with no husband present, and 36.1% were non-families. 31.6% of all households were made up of individuals and 19.0% had someone living alone who was 65 years of age or older. The average household size was 2.41 and the average family size was 3.03.
