Where can I find a Home brew shop in Ballwin Missouri? Question: I need wine, or beer yeast. I am making Mead, and I want to use the right yeast. I have been using bakers yeast, I made like 1.5 liters of bitter wine, and 2 liters of whatever maple syrup would make. Also, do I need to be 21yo to buy yeast at a home brew shop? I have no Idea where to find my home brew shop.
um, I'm not able to see any more than the 1st answer at the moment, so if you have any input on why that is please say something. I know that I have at least one other answer, because of my e-mail, but I can't read the whole thing.
Answer:
There is a homebrewer's shop not far from you, St. Louis Wine and Beermaking, in Chesterfield. I'm sure they will have everything you need. And yeast is yeast. Even if you are under 21, it is as legal to buy yeast in a brew shop as in a supermarket.

But the truth is that yeast is probably the least important ingredient to the homebrewer. When I got into homebrewing, perhaps 20 years ago, there was all this "learned" discussion about top-fermenting yeasts vs. bottom-fermenting yeasts, and brewer's yeast vs. bakers yeast. Later on, when some actual science was brought to the subject, it turned out that the differences--if they exist at all--are miniscule. This is more a matter of faith (or maybe superstition) than reality. I always used Red Star baker's yeast, and it was fine. One time, I got some genuine fresh yeast from Anheuser-Bush (whose rep came to speak at our homebrewer's club), and it made very little difference in the beer I produced.
Wine-making yeast might be a somewhat different matter. Because you get higher alcohol content in wine than in beer, some yeasts will not survive to complete fermentation. So, you may need special yeast for that (although, who really knows? Maybe that's superstition, too).
But I can tell you this, the secrets to good homebrew are these:
1. Keep it clean. No residues in your fermenter, rapid cooling to prevent bacteria from growing, and no soap leftover from your last cleanup.
2. Use top quality grain rather than malt extracts. Yeah, I know, it increases the work about 1000 percent, but it is hard to make great beer without starting from the grain. (And just to be completely honest, I have personally always used extract. But then, I'm lazy.)
3. Keep your fermenting vat at a constant temperature. If it is under the kitchen table or something, getting cold at night and warm during the day, your beer will suffer.
If you want to learn a lot more about how to make really good beer, look for any of the good books on the subject. I like the ones put out by Charlie Papazian

Or check out the magazine called "Zymurgy." Don't be put off by the technical-sounding name, There are lots of good artlcles and recipes and you will be a better brewer for it.
