The village is named for one of the early families of Franklin Parish.
Gilbert is located at 32°2′59″N 91°39′36″W / 32.04972, -91.66 (32.049677, -91.660109).
According to the United States Census Bureau, the village has a total area of 2.5 km² (1.0 mi²), all land.
As of the census of 2000, there were 561 people, 207 households, and 150 families residing in the village. The population density was 221.0/km² (573.5/mi²). There were 231 housing units at an average density of 91.0/km² (236.2/mi²). The racial makeup of the village was 62.21% White, 35.83% African American, 0.18% Native American, 1.25% from other races, and 0.53% from two or more races. Hispanic or Latino of any race were 1.96% of the population.
There were 207 households out of which 36.2% had children under the age of 18 living with them, 47.8% were married couples living together, 19.8% had a female householder with no husband present, and 27.1% were non-families. 24.6% of all households were made up of individuals and 14.5% had someone living alone who was 65 years of age or older.
